Passover Recipe Round-Up

As I continue to work on my seder menu, I thought I’d put together a quick round-up of all the Passover and Passover-friendly recipes I’ve shared here on KOAB over the last year and a half.

Roasted Zucchini and Eggplant Salsa from Rivki at Kosher Cooking for Ordinary People

Chilled Berry Soup – This is a refreshing appetizer, or a delicious dessert (try freezing it in Popsicle molds)

Smashed Potatoes – These.are.so.good! And I have a confession – I don’t love potato kugel. So this is what I make instead. And everyone loves this!

Kale Potato Gratin – Oh dear. This is not gonna help with the diet, letmetellyou. But it is really, really good. Worth the calories, for sure. And hey – it’s got kale in it. So that’s healthy, right?

Kugel with zucchini, sweet potato, red potato, onion and squash

Vegetable Kugel, Oven Baked Matzah Brie and Matzah Lasagna – Thanks to those of you who made my made-up-on-the-fly veggie kugel and let me know it was a hit at your house, too. This is definitely a “little of this, a little of that” kind of recipe.

    My favorite thing to make for Pesach are crepes that we then either fill with an assortment of fillings a (potato, cheese, mushroom and onions) or we just spread with jelly, cream cheese, butter, chocolate spread (if we can find it KLP) etc.
