It’s kind of funny. I live in Kansas City, the BBQ capital of the world – and yet I’m about as clueless in the ways of my city’s finest as it comes.

My idea of a spicy condiment is Dijon mustard – and even then, just a light shmear, please.

I do know enough, at least, to have been thrilled when Madison’s Original Hot Sauce contacted me to let me know me that they are newly certified kosher by the Kof-K (in addition to being all-natural and vegan).

Because for those of you who enjoy a little fire in your belly, it’s good to have options. Especially when those options are as pleasantly peppery – with rich garlicky undertones – as Madison’s.

The creation of Brad Child, Madison’s is named for US President James Madison, who is said to have stocked U.S. ships with spicy condiments so sailors could spruce up the bland food they were served out at sea.

Available at Whole Foods, Madison’s is perfect not only to perk up your grilling, but also to add interest to all your vegetarian and gluten-free cooking, too.

Black Bean and Quinoa Burgers

Serves 6

Ingredients

  • 2 cans black beans, rinsed and strained
  • 1 shallot
  • 1 chopped
 garlic clove, minced
  • 1 – 2 teaspoons chili powder
1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt & pepper to taste
  • Zest & juice of lime
  • 2 teaspoons Madison’s Original Hot Sauce
1 1/4 cup cooked quinoa
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil

Directions
1. To cook the quinoa, add 1 cup rinsed quinoa to 1 ¼ parts liquid. Bring to a simmer; reduce to low and cover, cooking around 30 minutes. Remove from heat and let sit covered for an additional five minutes. Set aside and let cool completely.

2. To prepare the burgers, add 1 ½ black beans, shallot, garlic, spices, lime zest, juice and Madison’s Original Hot Sauce to the bowl of a food processor fit with a steel blade, processing until mixture is a coarse, chunky puree. Transfer to mixing bowl and set aside.

3. Add remaining beans, cooked quinoa and tomato paste and stir together. Shape the mixture into 6 patties and chill in the fridge for 30 minutes or longer. Over medium heat, add olive oil and patties. Cook 3-5 minutes per side.

4. Serve with a drizzle of Madison’s Original Hot Sauce.

  14. Me and my family love Mustard all types!!! We go through so much mustard it’s crazy we use it in and on everything from salads to potato kugel (tastes like a knish)! I also like hot and spicy like schug and matbucha, but I make it myself so when I don’t get a chance (which is most times) then I do without.

  15. My favorite condiment is balsamic vinegar. I put it on everything (much to the chagrin of family and friends). I am lost without a bottle! I keep three bottles of basic Bartenura in the house and one bottle of the Bartenura “good stuff” for myself.

  23. My favorite condiment is Sara’s BBQ sauce. I add a bit of it to my chulent and its teriffic, but I would love to taste Madison’s.

  24. Favorite condiment – meera’s grandmother’s homemade Indian pickle. I was lucky enough to be taught this secret recipe so I keep a jar at dhall times to add to grilled cheese or to cooked rice. Mmmmm!!
