The February Repeating Menu Plan

In November, I posted about our new approach to menu planning. It was a little too “boring” for some of you, but others thought it was a great idea!

It worked out amazingly well for us in November and December and then last month, with everything going on, we got away from it. Not because having repeating meals made it “harder”, but rather because we just weren’t getting to the grocery store consistently. So, we ended up making a lot of “make do with what you have on hand” kind of meals. You know those weeks/months, right?

Anyway, now that it’s a new month, and hopefully (please G-d!) our lives are settling down a bit, I wanted to get us back on our predicable, repeating menu plan. And you know, I think this style of menu planning fits right in with my 31 Days of Decluttering series, don’t you?.

Here’s what I’m putting on the dinner plan for Sundays thru Thursdays this month. I’m heading to the grocery store today to pick up the ingredients for this basic menu plan — and given that it looks like Snow-copolis is coming our way, it’s probably a good idea to have everything we’ll need on hand for a while!

Sunday – Spaghetti & Meatballs with roasted broccoli (Sometimes we have meat sauce instead of meat balls. Sometimes we have it over rice or spaghetti squash instead of spaghetti. But however we serve it, this meal has become a real favorite on Sunday nights for my whole family!)

Monday – Vegetarian stir-fry (with tofu as protein) over brown rice

Tuesday – Chickpea curry over quinoa or couscous (Basically this just means that I use whatever veggies and spices I have on hand to make a sautéed chickpea dish (I don’t have a recipe for this, I just wing it)

Wednesday – Salmon with roasted veggies and left-over chickpea curry

Thursday – Pizza & salad (You just knew I was going to say “pizza”, right?)

I’m really working on making sure that we all get at least five cups of fruits and veggies a day. Hopefully having a dinner plan that features vegetables so prominently will go a long way toward meeting this goal!
