I’m a firm believer in Passover desserts that don’t taste like matzah. (Unless it’s “matzah crack” – then tasting like matzah, slathered in caramel and chocolate, is totally fine.)
I’m also a huge fan of lemon in my Pesach desserts. (I love the tangy bite of a lemon merengue, for example.)
Which is why it was kinda love at first sight for me when I discovered this amazing recipe for Frozen Lemon Wafer Cake in the brand new Passover cookbook, Passover Made Easy.
Written by the talented duo of Leah Schapira, founder & owner of CookKosher.com, and Victoria Dwek, managing editor of Whisk Magazine, Passover Made Easy takes a modern approach to Pesach recipes – including this mouth-watering lemon cake.
Lemon Wafer Cake for Passover
Passover Made Easy, p. 104
Ingredients
- 12 egg whites
- 1½ cups sugar
- 2 Tbsp potato starch
- 3 cups ground almonds
Lemon Curd Cream
- 2 whole eggs
- 8 egg yolks
- 1 cup sugar
- ¾ cup fresh lemon juice
- 2 Tbsp margarine or frozen oil
Instructions
1. Preheat oven to 350ºF. Line 2 jellyroll pans with parchment paper.
2. In the bowl of an electric mixer, beat egg whites until foamy. Slowly add in sugar, beating until stiff peaks form. Add potato starch and ground nuts. Divide batter between pans and use a spatula to spread evenly. Bake until golden, 20-25 minutes.
3. Prepare the lemon curd cream: Combine eggs, yolks, sugar, and lemon juice in a double boiler. Cook, stirring occasionally, until mixture thickens, about 10-12 minutes. Mixture may curdle slightly. Blend mixture using an immersion blender (if using a standard blender, blend and return mixture to the pot). Whisk in margarine.
4. Using a spatula, spread half the cream over one cake. Carefully place second cake over the cream. Spread the remaining cream over the second cake. Freeze until firm. Slice into squares or bars and serve frozen.
Optional: Garnish with whipped cream
Their breezy writing style is a total joy. The handwritten font is endearing. And the fact that the soft-covered cookbook opens landscape-style? That’s just yet another indication that Passover Made Easy is most definitely not your same old Passover milieu.
You can order Passover Made Easy on Amazon right now for only $10.87 – and it ships for free with Amazon Prime or via Super Saver.

Good Luck!

I like to make anything with chocolate for dessert over pesach.
I’ve been making chocolate chip Passover mandelbrot for years, a big family favorite. In fact I have to make enough for everyone to bring some home for the week. I make it nut free since we have a few who are allergic, so it’s good for everyone to enjoy! Great for breakfast too!

I’ve never found a “can’t live without it” dessert for Passover. I wouldn’t mind finding one. But mostly I just make store-bought cake mixes for them what wants, and skip dessert.

I love anything that is fast, fresh and easy.
Would love a non-gebroht cookbook for my gluten-free family for all year cooking.
Thanks you for trying to help us get organized all year long.
My favorite Passover dessert… that’s a tough one. Fresh fruit is lovely after a heavy meal. My mother also makes these chocolate chip cookies that are almost as good as Nestle Tollhouse – seriously, they do not taste like matzah at all. And a family friend makes what she calls “angels” – they are these meringue cookies with mini chocolate chips. The angels melt in your mouth. I’ve tried to make my own meringues, and they simply do not compare to the deliciousness created by our family friend. I’m already looking forward to them come shabbos chol hamoed (our families’ tradition to share that lunch each year).

Ms. Strom, do know of any sites discussing the use of coconut oil during Pesach? I can’t find any info on it anywhere 🙁

My favorite dessert are homemade fruit ices- you puree the fruits, water, sugar and I forget what else and freeze. So easy, delicious, and is really beautiful when you layer them with 3 different colors (strawberries, mango and kiwi are my fav). Also applesauce with pomegranates (if you can find, I live in warmer-weather areas so we can sometimes get them)!

I love making “good for you berry truffles” from food.com – use any combo of dried fruit and nut, but prune/almond is my fav. For a dairy variation, here’s a something that’s easy and perfect: stuff roasted almonds into prunes. Layer about 1/4 of the prunes in a single layer in a pretty dish. Cover with sour cream. Repeat until done with prunes. Sprinkle with any garnish you feel like, and refrigerate for at least a few hours. Yum!
