Weekly Menu Plan (Week of 2/14/16)

Just a quick post to share my weekly menu plan, as promised last week. I’d love to know what you’re having as well, so please comment down below to share your plan. We can all take inspiration and ideas from one another!

Sunday Crockpot chili & salad

Monday — Salmon, cauliflower rice, sauteed spinach with garlic (I’m trying to have fish at least once, if not twice, a week)

Tuesday — Build-your-own Tofu “bowl” — roasted cabbage, shredded carrots, julienned snap peas, sauteed tofu cubes, sauteed spinach, chopped cashews, shredded spaghetti squash, sunflower sauce

Wednesday — Chicken fajitas (I’ll have mine in a lettuce wrap, but the kids will probably have tortillas) with roasted chicken, sauteed peppers, onions and mushrooms, black beans, rice, homemade pico de gallo, guacamole

Thursday — Pizza & salad

FridayTandoori chicken, cauliflower rice, blanched green beans

  2. Are you doing another Whole 30? I’d be very interested to hear about that, if you are.

  3. Sunday and Monday night- lemon caper chicken, rice, roasted zuchinni, peppers, onions and green beans ( all mixed up)
    Tuesday night- lactose free spinach lasagna
    Wednesday night- teriyaki trout and sweet potatoes

  4. Taj Mahal chicken and cauliflower rice tonight
    Pizza and salad tomorrow
    Pleas do another whole 30! I need to do another one ASAP and I could use dome accountability buddies!!
